Pure desi cow ghee made from A2 milk is considered the healthiest form of ghee. A2 milk is produced by desi cows that only have the A2 beta-casein protein. There are two kinds of proteins in cow milk – A1 and A2, which differ by one single amino acid. And this amino acid changes the way the milk is digested in the human body. A2 is the purest form of milk produced by cows that are given fresh fodder, clean water, and kept in a happy environment. As a result, their milk is purer, more nutritious and easier to digest.

On the other hand, genetic modification and human intervention causes cows to produce milk with A1 protein. So, while A2 cows give less milk, as compared to their A1 counterparts, their milk is more wholesome and has many more health benefits.

We follow the traditional ‘bilona’ method of making ghee which is far superior to the commercial processed approach. In the ‘bilona’ method hormone free A2 milk from native cows is boiled and made into curd. This curd is then churned as per vedic bilona method. Butter is separated after churning the curd. The butter is heated on a slow flame until the water content is evaporated and pure golden ghee remains.
